As a solution, I will have 2 ignition switches. They are both little metal toggle switches, but one will be momentary and the other will be sustaining.

To run the truck, just make sure the sustaining switch is on.

To start, make sure the sustaining switch is on, and manually hold down the momentary switch to bypass the resistor. Simultaneously, press the foot starter at the same time.

Like I said, this is a farm truck, so im not concerned with it looking snazzy. I just want it to work.

That would be fine, and would look more like an airplane cockpit.
